Prunasin beta-glucosidase

In enzymology, a prunasin β-glucosidase () is an enzyme that catalyzes the chemical reaction

(R)-prunasin + H<sub>2</sub>O <small>D</small>-glucose + mandelonitrile

It belongs to the family of hydrolases, specifically those glycosidases that hydrolyse O- and S-glycosyl compounds. The systematic name is prunasin β-<small>D</small>-glucohydrolase. It is also called prunasin hydrolase.
